I have tried a lot of meatball recipes in my time.

We love them in our house, and both before children and now with hungry little ones to feed, meatballs have been a go-to in our family.

It’s a classic crowd-pleaser, but I’ve found a way to take them one step further.

These meatballs quite literally “melt” in your mouth. They are unbelievably soft and silky, and can be made and cooked in less than 20 mins.

On top of which, they are gluten-free and nutritionally far superior than your standard meatball recipe. Perfect for adults and babies alike, as their soft texture and extra vegetable content make them a wonderful finger food for babies as well as a luxurious tasting healthy meal for entertaining.

They are wonderfully versatile, being as at home in a Moroccan tagine as they are in the regular tomato sauce spaghetti dish.

I particularly love them served over pesto broccoli & potato mash or “courgetti” (“zoodles” to the American readers), or simply served up in a wholemeal baguette with spinach, tomatoes and garlic butter to make a delicious “meatball sub style sandwich.

This versatility is part of why I love meatballs as a recipe. As someone who craves variety and gets easily bored with similar food day in and day out, I love that I can make a big batch of meatballs for the weeks ahead and not have the same meal twice!

These meatballs literally fall apart in your mouth. They are delicious and gluten and sugar free. They are also packed with extra veggies, making them super healthy and cheap.

Course: Main Course
Ingredients
  • 2 lb (800g) beef mince
  • 1 large courgette, grated
  • 1 large carrot, grated
  • salt & pepper
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp mixed herbs (herbes de provences is great)
  • 1 cup greens (spinach is best), finely sliced
  • 2 eggs
  • 4 tbsp ground almonds
  • 1 oz Parmesan
  • 2 heaped tbsp ricotta
Instructions
  1. Mix all the ingredients in a bowl with your hands, until well combined. Shape into golf-ball sized balls.

  2. Fry in batches in a little oil until cooked through, about 10-15 mins.
