We are big mug cake fans in this house. Particularly my husband. Actually, that’s a lie. We’ve struggled to find a mug cake recipe that doesn’t have a weird texture, and often the results are disappointing. We are actually fans of just one AMAZING mug cake, which is our (ever so slight) adaptation of Chocolate Covered Katie’s one (using the xylitol and skipping the extra stevia as our sugar free option). It often features as my husband’s and my Wednesday night treat (I try and get the sweetener even lower or add some fruit instead to make it even less sweetened).

But it has recently been bumped as favourite after a few very successful tests resulted in an amazing sugar free mug cookie.

That’s right, you heard me, a sugar free cookie in a mug. Made in 1 minute. And totally delicious with a perfect crumbly cookie texture and taste.

Now, you are going to have to forgive me. I nearly called this low sugar because technically, if you use the chocolate chunks, it does contain some sugar. But there is a totally sugar free option in the cacao nibs, and even if you use the chocolate, you are looking at less than 1g of sugar in the cookie. Which is less than 1/4 tsp.

So I don’t feel too bad about calling this sugar free. Just be aware that if you make 25 of these in one day, you may just go over your daily recommended intake of free sugars. But I think that would be the least of your problems, since you may need to admit to a serious cookie addiction and would probably be unable to move for about 12 hours.

But this is a perfect mid-week pick-me-up treat. For those times when you really, really want a cookie. But you know buying a pack will only result in you consuming 20 in one sitting (no? just me?). One is a treat. A pack is a problem. So let’s have our cookie and eat it, too, by making one portion a quicker and healthier possibility than going to the shops and buying a whole pack!

Plus, it’s vegan, nut free and can be made gluten free, making it a treat that everyone can enjoy!

An almost-instant dessert, this mug cookie has all the taste and texture of a chocolate chip cookie, but has less than 1g sugar (+ a totally sugar free option) and can be made in 1 minute.

Ingredients
  • 2 heaped tsp coconut oil or butter, at room temperature (should be soft, not hard or melted)
  • 2-3 tsp xylitol (or a couple of drops of liquid stevia)
  • 1/4 tsp sugar free vanilla extract
  • 3 tbsp spelt flour (light is best, but wholemeal works - or use plain/all-purpose or gluten free)
  • 1/8 tsp sea salt (leave out if you use salted butter, which I highly recommend!)
  • 1/4 tsp bicarbonate of soda (baking soda)
  • 1-2 tbsp milk (dairy or unsweetened non-dairy)
  • 1 tbsp chopped 85-90% dark chocolate (about 5g)
Instructions
  1. Cream coconut oil or butter well with xylitol in a microwave-able mug. Stir in vanilla, flour, salt and bicarbonate of soda and mix until combined. Mix in enough milk to make a soft dough (we are looking for cookie dough, not batter). Mix in the chocolate and microwave on High for about 40 - 50 secs, until risen and cooked. Alternatively, cook in a preheated oven at 180C/350F/gas 4 for 15-20 mins in an ovenproof ramekin if you do not have a microwave.

  1. When making this the dough was very loose and separated. I think there was too much oil, it was supposed to be 2 tablespoons right?

    1. Oh dear, that doesn’t sound right! Maybe it’s a typo – I will test the recipe again and update if it is. It may have been 2 tsp? It certainly wasn’t greasy or oily when I tested it, it was much more cakey!

    2. Just re-tested and you are absolutely right, it was a typo! Should be 2 tsp (albeit fairly heaped ones). Thank you so much for pointing it out, I’d completely missed it. And for giving me an excuse to re-make this as it’s been a while. YUM. 🙂
