The summer still appears to be very much in full swing here in England at the moment, but we Brits know better than to think it’ll continue for long!

I am being reminded that it is in fact September by the last of the peaches appearing. The ones that are squishy and bruised, but still juicy and sweet nonetheless. I noticed that they have just started appearing in the “reduced” sections at very cheap prices as the season draws to a close, and since peaches are pretty much my favourite food in the entire world, I had to grab some.

But what do you do when they are starting to get a little too soft and squishy (if there is such a thing with peaches)? Well, in this case, you pair them with the last of the crème fraîche (or yogurt) that only has another day or two left in it, and voila! Gorgeously silky and delicious sugar free peach ice cream that is sugar free and uses up what would otherwise be thrown away.

Win.

Little hands can:

  • pretty much do this themselves!
  • if not use pre-frozen peaches, slice the fresh ones up for them and then have them lay the slices out on a lined tray for freezing
  • place the peaches and creme fraiche into the blender and push the buttons
  • help (with heavy supervision) you scrape down the sides of the blender every now and then if needed

Insanely easy and completely sugar free, this peach ice cream is perfect for summer and tastes completely indulgent despite only containing 2 ingredients! Easily made vegan.

Servings: 2 servings
Ingredients
  • 3 soft ripe peaches (I used flat ones)
  • 1/4 cup (60g) creme fraiche (yogurt works here, too - use coconut cream or coconut yogurt for vegan to get the same creaminess)
  • rice syrup or stevia to taste, optional
Instructions
  1. Chop the peaches into chunks and freeze them for at least 4 hours.
  2. When they are frozen, blend them with the creme fraiche and sweetener, if you are using it.
  3. This will make a very soft serve ice cream and you can eat immediately if you like, but if you want to a little bit more set, pop it in a container back in the freezer for an hour or so until it is the consistency you like.
